INSTRUCTIONS
Preheat your oven to 350°F (175°C). Grease your baking pan and line it with banana leaves for added flavor.
In a large bowl, whisk together the eggs and sugar until light and fluffy. Gradually mix in the coconut milk and regular milk.
Sift in the rice flour, baking powder (if using), and salt. Stir until just combined, ensuring not to overmix.
Pour the batter into the prepared pan, smoothing the top with a spatula.
Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. For a slightly charred top, broil for the last 1-2 minutes of baking.
Let the Bibingka cool slightly before serving. Garnish with grated coconut, slices of salted duck egg, and cheese if desired.
