Ingredients:
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
3 ripe bananas, mashed
3/4 cup sugar
1 egg, lightly beaten
1/3 cup unsalted butter, melted
1 tsp vanilla extract
Cream Cheese Filling:
1/2 cup cream cheese, softened
1/4 cup powdered sugar
1 tsp vanilla extract
Garnish:
1 banana, sliced
A pinch of ground cinnamon
Directions:
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a bowl, combine flour, baking soda, cinnamon, and salt.
In a separate bowl, mix mashed bananas, sugar, egg, melted butter, and vanilla.
Blend the banana mixture into the flour mixture until just moistened. Fill muffin cups halfway with batter.
Mix cream cheese, powdered sugar, and vanilla until smooth. Drop a teaspoon of this filling into each muffin cup.
Top with the remaining batter. Bake for 18-20 minutes, or until muffins spring back when touched lightly.
Cool for 5 minutes, then transfer to a wire rack. Garnish with banana slices and a sprinkle of cinnamon.
